Casual Caprese Salad

Italy has a long and proud tradition of creating some of the worlds most admired culinary masterpieces. Conversely, America has a long tradition of modifying these recipes for the sake of convenience (think ravioli a la’ Chef Boyardee.) With that in mind, we offer you Insalada Caprese Fatty Style.

For this recipe you will need:

  • A variety of tomatoes: (This is up to your discretion, but we suggest you choose at least 3 for your array. This includes but is not limited to; yellow, heirloom, tomatillo, orange, red, roma,
    cherry or grape)
  • 1-2 Large orbs of fresh mozzarella cheese
  • 5 Tbsp Balsamic vinegar dressing
  • 10-12 Fresh basil leaves
  • 2-3 Sprigs of parsley

Take your tomatoes and cut them into small wedges or discs. Smaller tomatoes like cherry or grape can
be left whole.
Slice your mozzarella into discs

Shred some basil.
Cut a few sprigs of parsley to taste.

Combine the ingredients, add balsamic vinegar and toss.
You have a new twist on an old Italian classic that’s sure to tantalize!
