You can smell it in the air, on a whiff of sea-foam carried ashore by the coastal wind. You can feel it on your skin, the sun breaking through the layers of lazy spring clouds still lingering about. Summer is right around the corner and with it the promise of warm weather. The balmy days ahead always put us in the mood for fresh fruits and crisp salads. We served up a little dose of sunshine for ourselves with the Raspberry, Pear and Walnut salad.
This recipe requires:
- 1 cup of raspberries
- 1/2 a cup light raspberry vinaigrette
- 1 cup of walnuts
- 1/4 cup crumbled blue cheese
- 1 pear
- romaine lettuce (chopped)
Lay down a layer of chopped Romain lettuce on a plate. This will be the foundation of your salad.
Next, take a pear and cut it into thin slices, lay these atop your lettuce. The fresh aroma of these fruits should have you in a summer mood in no time.
Now top this with a sprinkling of blue cheese and walnuts. Plop a handful of plump raspberries into the center. Things are looking brighter already!
With everything in place, drizzle raspberry vinaigrette over top. This really serves to bind these flavors together into an elegant mélange. The sweetness of the berries is nicely balanced by the bitter accent of blue cheese. The walnuts provide wonderful texture and a warm, woody flavor that is punctuated by the contrasting tartness of the vinaigrette. The pears serve as the buffer in this dish, complimenting both the sweet and tart flavors, while adding a delicate crispness that prevents the walnuts from overwhelming the tongue.
This is a healthful yet sumptuous salad that can be prepared in minutes. Go ahead and get swept away by this sultry summer sensation.
