Super Foods?: Berry Parfait

Today we prepared a recipe of our own, while still keeping to the theme of super foods. This recipie has been brightening up our picnics and barbeques for years now, and we’re pleased to share it with you. It’s a quick and simple treat that we hope you’ll love, Berry Parfait. We find that on a stifling hot Summer’s day, there’s really nothing quite like the cool taste of berries and cream to simmer down the scorch.

This Recipe Requires:

  • Strawberries (We used 64oz)
  • Blueberries (32 oz)
  • 4 cups Cool Whip
  • 2 Cups yogurt (We prefer strawberry yogurt for an extra kick of flavor)
  • 2 Tbsp. Sugar Substitute

 Start off by hulling and rinsing your strawberries. Set them aside in a bowl and give your blueberries a good spritz as well. Always rinse your fruit!

Next, fold together your Cool Whip and yogurt.

In your serving bowl, lay down a layer of that fluffy whipped mixture.

Next, add a layer of strawberries. Sprinkle with a teaspoon of sugar sub.

Now coat those berries in another layer of whipped topping.

Next, add a layer of blueberries, and another teaspoons worth dusting of sugar sub.

Again, smother your berries in yet another layer of whipped dreaminess.

Now arrange some berries on top for presentation, and voila! A taste of summertime any time!

You may be interested to know that berries are a satisfying way to take in some vitamin C and fiber. These natural sweets also come packed with manganese and a smattering of antioxidents. Diets that regularly include berries have been shown to lower cancer rates, with specific focus on cancer of the liver.
